How to make Bottle guard kootu(Surakai kootu)


Kootu is one of south Indian sidedish which is prepared with vegetables and Dal. It can be had with rice and any puli kulambu or vathal kulambu. It is very simple to prepare as well as healthiest too. If you start to weight lose you can include this dish to your diet, because bottle guard having more water content in it. Kootu is preparing with the same method by using snake guard,chu chu,Ridge guard instead of bottle guard


Ingredients:
1 Cup Bottle guard chopped(Half size bottle guard)
4 tsp moong dal
1 pinch hing(Perungayam)
1 pinch turmeric power

For Grinding:
½ Cup Grated coconut
2 green chilies
8 small onion (peeled)
3 Garlic (Peeled)
½ tsp cumin seeds

For tempering
 ½ tsp Mustard seeds
1 small onion chopped as tiny pieces
1 sprig curry leaves

Preparation:
·         Grinding the grated coconut, green chilies, small onion ,garlic and cumin seeds as fine paste and keep aside
·         Rinse the moong dal 2 to 3 times and keep aside
·         Peel the bottle guard and chopped as small pieces and keep aside

Method:
·       In a pot add 1 cup of water. When the water start to boil add bottle guard and cook it for a minute.Then add moong dal ,let them cook until bottle guard and Moong dal are half cooked
·      Add Hing and turmeric powder to the kootu let it boil for a minute
·      Add Grinded paste to the kootu let it cook until bottle guard and moong dal cooked well and the raw smell of grinded paste disappear
·       Meanwhile in a pan add 1 tsp oil and mustard seeds, when it crackle add chopped small onion let it fry till onion turns brown and finally add curry leaves
·       Pour the tempering over the bottle guard kootu and mix well
·       Serve the kootu with hot rice and puli kulambu or valthal kulambu
