Vegetable Kuruma is the delicious South Indian side
dish. Kuruma is preparing with vegetables spices,coconut and Khus khus. Serve with
Chapathi or Idiyappam.

Carrot Chopped

For Grinding:

Garlic peeled

small piece Ginger

Batham or Cashews

tsp Khus Khus(Poppy seeds)

Cup Grated Coconut
For Tempering:

Star Anise
2
Cardamom
2
Cinnamon
3
Cloves
½
Fennel Seeds(Perunseram)
Preparation:
1.
Add
Carrot, Potato, Peas and Flat Beans to the pan. Add required water, boil them
until the vegetables gets cook well and keep aside
2.
Add
Garlic and Ginger to the Mixi jar and grind as smooth paste and keep aside
3.
Add
remaining ingredients, grated coconut, Batham, Khus Khus grind it as smooth
paste and keep aside
Method:
1.
Heat
a pan add 2 tsp oil. Add 1 star Anise, 2 Cardamom, 2 Cinnamon, 3 Cloves, ½
Fennel seeds sauté them until its turns

Add
Onion sauté them till the onion turns transparent
3.
Add
Tomato sauté them till the tomato gets mushy
4.
Add
Ginger&Garlic paste and sauté them till the raw smell disappear
5.
Add
Coriander leaves and sauté it for a minute
6.
Add
1 tsp Chilli Powder and 1 tsp coriander powder, sauté them for a minute
7.
Further
more add Masala paste. Sauté them till the raw smell disappear
8.
Add
the boiled vegetables ,required water and salt. let it boil the gravy cooks well
9.
Finally
sprinkle the Methi to the vegetable kuruma(Optional)
10.
Serve
the kuruma with chapathi or idiyappam
