For Grinding:

Green chilies

Cup Grated Coconut

tsp Cumin seeds

Garlic, Peeled
For Tempering:

tblsp Coconut oil
1
tsp Mustard seeds
1
Sprig Curry leaves
Preparation:
1. Cut all vegetables in
lengthy wise and keep aside
2. Transfer grated coconut,
cumin seeds and garlic to blender, grind them as paste and keep aside
3. Transfer sambar shallots
to blender and grind it separately and keep aside
4. Transfer Green chilies to blender and grind it separately and keep
aside
Method:
(1
cup = 150ml)
1. In a pan add 1 cup of
water and vegetables. Close the lid let them cook half
2. Add hing, grinded
chilies and shallots. Mix well with vegetables
3. Add Grinded coconut and
mix well. Close the lid let it cook till the masala raw smell disappear
4. Meanwhile in a pan, add
2 tblsp coconut oil and mustard seeds. When Mustard seeds crackle add curry
leaves.
5. Pour the tempering over
the Aviyal and mix well. Let it sit for 5 minutes
6. Add 5 tblsp Curd and mix
well
7. Serve the Aviyal with
rice and sambar or rasam

Notes:
1. For tempering we should
use coconut oil. it give more tasty and traditional way too
2. Curd is optional. If you
like the taste you can add it else skip the step
