How
to Make Vegetables stew
Vegetable stew is the Perfect side dish for Appam. It is also
served with idiyappam. Vegetable stew is the
Popular cuisine from kerala. It
is very simple to prepare. Here vegetable stew with step by step photos.
Ingredients:

Carrot, Chopped

Beans, Chopped
1
Potato, Chopped
1
Cup Peas
1
Onion, Finely chopped
1
Piece Ginger, finely chopped
2
sprig Curry leaves
2
tblsp coconut oil
For Grinding:
8
Cashews
2
Piece Cinnamon stick
2
Cardamoms
1
Cloves
2
Green chilies
1
tblsp Poppy seeds
For Coconut Milk
(1
Cup = 250 ml)

Cup grated coconut
Preparation:
1. In a bowl add Peas soak
it in water for 5 hours. After 5 hours drain the water from bowl and keep aside
2. In a cooker add Carrot,
Potato, Beans , Peas and salt (for vegetables). Cover the pressure cooker for 2 whistles. Once the pressure cooker settle down open the cooker and keep aside
3. Transfer all the
grinding ingredients to the mixi jar, grind them as fine paste and keep aside
4. Transfer 1 cup grated coconut
to the mixi or blender jar and take coconut milk. Keep separately first and
second coconut milk
Method:
1. In a pan add Coconut
oil. then add Ginger and Curry leaves sauté for a minute
2. Add Onion sauté it till
gets transparent
3. Add Cooked vegetables and
mix well
4. Add Second coconut
milk(thin coconut milk) and mix well. If you need you can add some
water(optional)
5. Add Grinded paste and
mix well
6. Let it cook till the
masala raw smell disappear
7. Finally add first
coconut milk (thick coconut milk). Stir well for a minutes on low heat.
8. Switch off the flame and
Serve with Appam or Idiyappam

My Notes:
- If you need you can add some water while cooking the stew other wise you can skip the water
- Coconut oil should be used for authentic taste
