Ingredients:
250 gram Kothavarangai(Cluster Beans)
2 onion,Chopped as lengthy wise
¼ Cup Grated Coconut (4 tblsp)
1 tblsp chilly powder
1 tsp turmeric powder
4 tblsp raw peanuts
Salt to taste
100 ml Water
To Tempering:
1 Tsp Mustard seeds
1 Sprig Curry leaves
1 Tblsp Cooking Oil
Preparation:
Cut 2 edges of kothavarangai, wash them
and cut as lengthy wise pieces and keep aside
Method:
- Heat a pan, add 4 tblsp raw peanuts and fry them till turns brown
- Transfer fried peanuts to the mixi jar, grinded as nice powder
- In the same pan, add 1 tblsp oil and Mustard seeds
- When mustard seeds crackle, add Curry leaves and Onion. Sauté it till onion gets transparent
- Add Chilly powder and turmeric powder,mix well
- Add kothavarangai and water,mix well
- Close the lid and let it cook till the kothavarangai cooks half
- Add grinded peanut powder,grated coconut and needed salt,mix well
- Close the lid and let it cook on low heat for 5 minutes
- Serve Kothavarangai poriyal with rice and sambar
