Veg & Soya Biryani Recipe
Ingredients:
2
cup Basmati rice
2
Onion, finely chopped
1
tomato, finely chopped
4 sprig Mint(Puthina) leaves
4 sprig Mint(Puthina) leaves
1
carrot, chopped
5
Beans, chopped

meal maker(soya)
1
tblsp chilly powder
½
tblsp coriander powder
To grinding:
5
garlic
1
piece ginger
To Tempering:
1
tsp Fennel seeds (Perunjeeragam)
2
Cloves
2
pieces Cinnamon
1
star anise
2
Cardamoms
1
Bayleaf
3
tblsp ghee
2
tblsp cooking oil
Preparation:
1. Transfer ginger and
garlic to the mixi jar, grind them as fine paste and keep aside(its 1 tblsp
ginger garlic paste)
2. In a bowl add rice and
soak it in water for 30 minutes. After 30 minutes drain the water completely
and keep aside
Soya preparation:
1.
In
a bowl add 3 cup of water and do boil. switch off the flame
2.
Add
soya into the boiled water let them leave till the soya get soften
3.
When
the soya gets soften drain and squeeze the water completely from soya
4.
Furthermore
rinse them in cold water and squeeze the excess water from soya
5.
Cut
the soya as 2 pieces if you using bigger size soya
Method:
- Heat a cooker add 2 tblsp oil and 2 tblsp ghee. Then add cloves, cinnamon, cardamoms, bay leaf, fennel seeds and star anise, sauté for a minutes on low flame
- When fennel seeds start to splitter add onion, fry it on low flame till turns golden brown
- Add ginger garlic paste, sauté it till the raw smell disappear
- Add mint leaves and sauté for a minutes
- Add tomato, fry it on low flame till gets mushy
- Add chili powder and coriander powder. Mix well and sauté for minutes on low heat
- Add vegetables and soya. Mix well
- Add 4 cup of water and mix well
- Add rice and mix well
- When water start to boil close the lid and let it cook for 3 whistles on medium flame
- Once the pressure cooker settle down open the cooker and add remaining ghee do the mix
- Serve the Veg&soya biryani with raitha

Fry it on low flame till gets mushy
Add chili powder and coriander powder
Mix well and sauté for minutes on low heat
Add vegetables and soya. Mix well
Add 4 cup of water and mix well
Add rice and mix well
Water start to boil
Close the lid and let it cook for 3 whistles on
medium flame
Once the pressure cooker settle down open the
cooker and add remaining ghee do the mix
Serve the Veg biriyani with
soya biryani with raitha
My notes:
- Add 1:2 proportion of rice and water ratio. before start to cook, you should soak rice with water for 30 minutes
- we should cook rice on medium flame otherwise it will get burnt
