Unniappam Recipe | Gluten free


Ingredients:
(1 Cup = 200 ml)

2 cup rice flour
2 Banana
1 Cup Jaggery (Adjust as per your sweet preference)
4 crushed cardamoms
1 piece crushed dry ginger
1 tblsp ghee
20 coconut bits
oil as needed
Water as needed

Batter Preparation:
1.       Peel the banana skin, transfer them to the mixi jar, grind it as paste and keep aside
2.      In a pan add 1 tblsp ghee, add coconut bits and fry them till turns golden brown
3.      In a pot add 1/2 cup water and jaggery, Stirring on medium flame for the jaggery to dissolve. switch off the flame. Filter the jaggery syrub and set aside
4.      In a bowl add rice flour,filtered jaggery syrub and water if needed, mix well
5.      Add banana puree, crushed cardamom & dry ginger and fried coconut bits, mix well
6.      The batter should be thick consistency like idly batter
7.      Let it sit for 4 to 5 hours for fermentation

Unniappam preparation:
1.       Heat paniyaram pan, add 2 tblsp oil in each mould. Fill it with batter
2.      let it cook on Medium heat until the sides cook well
3.      Once it leaves the sides, flip it over the other sides
4.      Insert the toothpick centre of the Unniappam to check whether it is cook well. If the toothpick comes clean ,the Unniappam cook well
5.      Repeat the same process for remaining batter
6.      Serve the Unniappam and enjoy

 In a pot add powdered jaggery
Add 100 ml water,Stirring on medium flame for the jaggery to dissolve it

Add crushed dry ginger and cardamom, let them cook for a minutes
Filter the jaggery syrub and keep aside
In a pan add 1 tblsp ghee, add coconut bits 
Fry them till turns golden brown
Banana
Peel the banana skin, transfer them to the mixi jar
Grind them as smooth puree
In a bowl add 2 cup of rice flour
Add Filtered jaggery syrub to the rice flour(add water if need)
Mix well without any lumps
Add Banana Puree
Mix well and the batter should be idly batter consistency, let it sit for 4 to 5 hours for fermentation
Add Fried coconut bits and mix well
Heat paniyaram pan, add 2 tblsp oil in each mould
Fill with batter,let it cook on Medium heat until the sides cook well
Once it leaves the sides, flip it over the other sides
Serve the unniappam and enjoy
