Adai Dosa Recipe


Adai Dosa is healthy and protein rich Breakfast and Dinner recipe. It is basically tamil cuisine.Adai will be prepared thick or thin ,soft or crisp as per your choice. It will be serve with coconut chutney or Aviyal.


Ingredients:
1 Cup raw rice
½ Cup Channa Dal
½ Cup Toor Dal
¼ Cup Moong Dal
¼ Cup Urad Dal
½ tsp Cumin seeds
½ tsp Fennal seeds(Perunjeeragam)
1 tsp Fenugreek seeds
1 small piece Ginger
4 red chilies
4 Peeled garlic
1 Pinch Hing(Perungayam)                          
¼ tsp turmeric
Salt to taste
Water as needed

For seasoning:
1 onion chopped
2 green chilies sliced
Drumstick leaves (Murungai keerai)
1 tsp oil

Preparation:
·         Wash 1 cup raw rice or idli rice 2 or 3 times and soak it water, let it sit for 2 to 3 hours
·         Take another pot, Wash Channa dal, Toor dal, Moong dal and Urad dal 2 or 3 times and soak it water, let it sit for 2 to 3 hours
·         Wash Cumin seeds, Fennal seeds, Fenugreek seeds, Garlic, Ginger and red chilies , soak them along with dals
·         Drain the water from both pots

Making Adai batter
·         Transfer the Rice to the mixi jar
·         Add all lentils, cumin seeds,Fennal seeds,Fenugreek seeds,Garlic,Ginger,red chilies,1 pinch   hing and ¼ tsp turmeric powder along with water to the blender
·         Blend to a slightly coarse paste or thick batter
·         Tranfer batter to the bowl
·         Now adai batter is ready. Allow to rest for 2 to 3 hours. You can also skip resting

Making Adai Dosai:
·         Heat a pan. Add 1 tsp oil and add onion, green chilies and drumstick leaves. Sauté them till the onion turns transparent
·         Add them to the batter as well required salt and mix well
·         If you prefer to make thick adai, the batter consistency should be thick.
·         If you prefer to make thin adai you can add more water to the batter as you needed. The consistency of batter is slightly less thick batter, not runny. It should be easily spreadable to the pan
·         Heat the Dosa pan. Pour one ladle of the batter and spread it like dosa. Spread it thick or thin as per your choice
·         Add ½ tsp of oil or ghee across the edges. Cook on medium flame
·         When it cooks on one side, flip it and cook on other side as well
·         Serve Adai with coconut chutney or  Aviyal

Ingredients:






Soak the rice into water for 2 to 3 hours


Soak all lentils and spices into water for 2 to 3 hours


Transfer the rice into Mixi


Transfer the all lentils and spices to the mixi and add turmeric and Hing as well. Add water if required


  Blend to a slightly coarse paste or thick batter


Transfer the batter to the bowl


Heat a pan. Add 1 tsp oil and add onion, green chilies Sauté them till the onion turns transparent


Add Drumstick leaves saute them the raw smell will disappear



Add them to the batter as well required salt and mix well


Dosa batter is ready


Heat the Dosa pan. Pour one ladle of the batter and spread it like dosa. When it cooks on one side, flip it and cook on other side as well


Serve the dosa with chutney and Aviyal


Notes:
·        If you prefer to make thick adai, the batter consistency should be thick.
·        If you prefer to make Crispy adai you can add more water to the batter as you needed. The consistency of batter is slightly less thick batter, not runny. It should be easily spreadable to the pan
·        Drumstick is optional. If you add drumstick leaves, it will be give good taste as well healthiest too
