Pudina chutney Recipe | Mint chutney Recipe

Pudina chutney with step by step photos

Ingredients:
2 Handful Pudina
6 Sambar shallots, Peeled
1 Green chilly
1 tblsp channa
2 Garlic, Peeled
1 small piece tamarind
3 tblsp Grated coconut
Salt to taste
1 tsp cooking oil

For Tempering:
1 tsp oil
1 tsp Mustard seeds
1 Sprig Curry  leaves

Method:

1.       Heat a pan, add channa dal and fry till it turns golden brown. Transfer it to the plate and keep aside
2.      In the same pan add 1 tsp oil. Add Garlic and sambar shallots. Fry them till onion gets transparent. Transfer it to the plate and keep aside
3.      Add Pudina and sauté it till gets shrink. Transfer it to the plate and keep aside
4.      Let them cool for a minute
5.      Transfer fried ingredients, coconut, tamarind, green chilly and salt to mixi jar. Grind it as smooth paste(add water if required)
6.      Transfer the pudina chutney to the bowl
7.      Meanwhile, in a pan add 1 tsp oil and mustard seeds
8.     When Mustard seeds crackle, add curry leaves
9.      Pour tempering over the Pudina chutney and mix well
10.  Serve the Pudina chutney with idly or dosa
