Thakkali Sadam Recipe | Tomato Rice Recipe

Tomato rice is the tastiest and delicious dish. It is preparing with main ingredient tomato and onion. Very easy to prepare for lunch menu. Tomato rice preparation step by step photos below

Ingredients:
2 cup rice
1 Onion(Big size), chopped
4 tomato(Medium size), chopped
5 garlic
1 piece ginger
1 tblsp chilly powder
½ tblsp coriander powder
1/2 tsp turmeric
1 tsp Fennel seeds (Perunjeeragam)
2 Cloves
2 pieces Cinnamon
2 Cardamoms
1 star anise
Few mint leaves(optional)
1 Bayleaf
1 tblsp ghee(optional)
2 tblsp cooking oil
4 cup Water
Salt as needed

Preparation:
1.       Transfer ginger and garlic to the mixi jar, grind them as fine paste and keep aside(its 1 tblsp ginger garlic paste)
2.      In a bowl add rice and soak it in water for 30 minutes. After 30 minutes drain the water completely and keep aside

Method:
  1. Heat a cooker add 2 tblsp oil and 1 tblsp ghee. Then add fennel seeds, cloves, cinnamon, cardamoms, bay leaf and star anise, sauté for a minutes on low flame
  2. When fennel seeds start to crackle add onion, fry it on low flame till turns golden brown
  3. Add ginger garlic paste, sauté it till the raw smell disappear
  4. Add tomato, fry it on low flame till gets mushy
  5. Add chili powder,turmeric and coriander powder. Mix well and sauté for minutes on low heat
  6. Add rice and mix well
  7. Add 4 cup of water and required salt.mix well
  8. Add few mint leaves
  9. When water start to boil close the lid and let it cook for 3 whistles on medium flame
  10. Once the pressure cooker settle down open the cooker and do the mix
  11. Serve the tomato rice with potato fry or pickles

My notes:
Add 1:2 proportion of rice and water ratio. before start to cook, you should soak rice with water for 30 minutes
