Thandu keerai poriyal Recipe| Foxtail Amaranth fry recipe

Ingredients:

1 bunch Thandu keerai(Foxtail Amaranth)
1 onion, Chopped
2 green Chilies
5 tblsp grated Coconut
½ tsp cumin seeds
2 garlic cloves
Salt to taste

To Tempering:

1 Tsp Mustard seeds
1 Sprig Curry leaves
2 Tblsp Oil

Preparation:

1.       Transfer cumin and garlic to the mixi jar. Grind it as fine paste.
2.      Clean the thandu keerai and wash the keerai 4 to 5 times and chop them into small pieces and keep aside

Method:

1.       Heat a pan. Add 2 tsp oil
2.      Add Mustard seeds. When mustard seeds crackle, add Curry leaves, green chilies and Onion. Sauté it till onion turns transparent
3.      Add thandu keerai. Close the lid and let it cook for 10 minutes on low heat
4.      Add grinded cumin and garlic paste. Mix well
5.      Add grated coconut and salt let it cook until the keerai cooks well
6.      Serve Thandu Keerai poriyal with rice

Step by Step Pictorial Instructions:

Heat a pan. Add 2 tsp oil. Add Mustard seeds
When mustard seeds crackle, add Curry leaves, green chilies and Onion. Sauté it till onion turns golden brown
Add thandu keerai.Close the lid and let it cook for 10 minutes on low heat
Thandu keerai will be shrink 
Add grinded cumin and garlic paste. Mix well
Add grated coconut and salt
Mix well and let it cook until the keerai cooks well
Serve Keerai poriyal with rice
