Quick Vegetable Kurma in pressure cooker

Vegetable Kurma is the delicious South Indian side dish. Kurma is preparing with vegetables, spices and coconut. Serve with Chapathi or Idiyappam

Ingredients:
1 Carrot, Chopped
1 Potato, Chopped
1 Tomato, Chopped
10 Beans, Finely chopped
1 Onion Chopped
2 sprig Mint leaves(puthina)
1 tblsp chilly powder(adjustable)
½ tblsp coriander powder
2 tsp Oil
Salt to taste
Water as needed

For Grinding:
5 Garlic peeled
1 piece Ginger
2 tblsp peanuts
¼ Cup grated coconut(6 tblsp)
2 tsp fennel seeds

For Tempering:
2 Cardamoms
2 Cinnamons stick
2 Cloves
1 bay leaf
1 tsp Fennel Seeds (Perunjeeragam)

Preparation:
  1. Add Garlic and Ginger to the Mixi jar and grind them as smooth paste and keep aside
  2. Add grated coconut, peanuts and fennel seeds, grind them as smooth paste and keep aside

Method:
  1. Heat a Cooker add 2 tsp oil, Add Bay leaf, Cardamoms, Cinnamons stick, Cloves and Fennel seeds. sauté them until its gets aromatic
  2. Add Onion sauté them till the onion turns transparent
  3. Add Ginger & Garlic paste and sauté them till the raw smell disappear
  4. Add Tomato sauté them till the tomato gets mushy
  5. Add Chilly Powder and coriander powder, sauté them for a minute
  6. Add vegetables and mix well
  7. Add required water, masala paste and salt then mix well
  8. Finally add Mint leaves
  9. Close the cooker lid and let them cook for 5 to 7 whistles
  10. Once the cooker settle down open the cooker and do the mix and cook on medium flame for 5 minutes
  11. Serve the kurma with chapathi or idiyappam

Once the cooker settle down open the cooker and do the mix and cook on medium flame for 5 minutes
Serve the kurma with chapathi or idiyappam
